Founded in 2010 Dark Horse is an upstart Kansas City distillery that is family-owned and operated by the Garcia siblings. Focusing on craft whiskies, Dark Horse buys its grain from local farmers and mills it at the distillery, giving them much better control over their grain. Made from 100% rye, this whiskey is fermented over 5 to 7 days employing the classic sour mash method. This Rye is gently distilled in a 500-gallon copper hybrid still named Chester Copperpot, before being matured in new Missouri Oak barrels for about 18 - 20 months.
n: high in black pepper and spice. Vanilla, wet grass, and fresh ginger.
t: hot and raw, wheatgrass fire. Doughy cinnamon bread and coarse black peppercorn. Charred oak shows in the finish when it calms down. Too sharp and not cohesive; shows potential but needs more time to coalesce. A little water helps, but does something funky to the finish.
