Aged in used charred casks and distilled from 100% Hopi blue corn (Atole). 

n: warm butterscotch, light cinnamon, wheat dinner rolls baking. Sweet corn cakes with honey butter; or maybe nutty cinnamon rolls. Kellogg's Frosted Flakes cereal on steroids.

 

t: hot and densely flavoured - charred sweet corn, roasted pecans, and dry cloves but this has a bit of a sharp spice (think habañero). Charcoal and white pepper in the middle with some raisin sweetness appearing. This is very interesting in the savoury aspect; it's like a popcorn ball dusted with spicy mexican chocolate. Finish is burnt corn + spice - sweet and unique. [B., reviewed batch TB 15-1, 61.2% abv]
