n:  Antique furniture.  Funk and a bit of peat.

 

p:  Oily and magnificent.  Vegetal with olive oil and a lemony zest.

Fuji
 

Warm olive oil over toasted sourdough. Peanut brittle and toffee. Light peat and ocean breeze.


Somewhat restrained on the palate. But it offers warm peaty goodness with toasted walnuts and pistachio. Trail mix-y.


Lingering finish with salt and grapefruit

 
Ries
 

n: initial peat smoke, lemon cream, proscuitto, fresh buttercream. Nice floral smoke and a hint of sea spray.

 

t: this is delicious! Controlled char, tangy citrus, and grey sea salt. More wood char and smoke in the middle. Sour salted plum (ume) in a dark, ashy finish.  [A-/B+]
