Nose: Heavy on the oak and wood polish with toffee notes. Very nice.

 

Palate: Charred oak, citric acid, some light maple syrup notes. Water brings out some sweeter notes but also some bitterness.

 

Finish: Oak and a slight bitterness on the tongue.

 

Overall: A nice nose but on the palate this one seemed a bit over oaked.

N: Spicy. Nutmeg, a little clove, light orange notes on top. A little apple cider - maybe mulled. A touch of anise. 

 
P: Nice and full onentry, delightfully sweet but not cloying. More hints of apple, gentle heat. A little marshmallow, slightly clay-like earthiness. Vanilla. Slightly caramel sweetness. 
 
F: Nice finish. A little appley sweetness, some light cinnamon. 
 
I could drink this for quite a while. There's a lot going on in it, and the apple notes predominantly coming through as cider is an interesting and fun change from the usual waxy apple/apple skin notes.
