Pike Creek Canadian whisky from Corby Distillers is made at the Hiram Walker disitllery in Canada, which is now run by Pernod Ricard. The whisky is double distilled, unlike the typical triple distillation of Canadian whisky. It is aged in white oak barrels before being finished in vintage port barrels.

n: honey and soft wheat bread with butter. Wet green grass and soft black raisins and apricots. Prines from the port and warm yeast on the nose.

 

t: quite sweet with initial spiced prune juice (like a boiled plum with cloves pressed into it). Middle has full caramel and the sweetness is tapered by the wood character. Finish is waxed raisins. A lot going on here, not completely cohesive, but full of flavour.

The nose is mostly antiseptic. The palate is slightly sweet and medicinal with a touch of spice and wood before devolving into pure alcohol notes with a kiss of malt. The finish has a mild sweetness but is dominated by bitterness and alcohol notes on the palate. Between the heavy medicinal and bitter notes, this stuff is pretty horrible.
