Built in 1934 and located 50 kilometers west of Sapporo on the island of Hokkaido, Yoichi is the northern most whiskey distillery in Japan. The distinct aroma comes from the distillation process where the pot stills are direct fire heated by powdered coal. Yoichi has an underground water source that is filtered through peat and has its own kiln topped with traditional pagoda-shaped chimneys. The Yoichi distillery is located just one kilometer from the sea contributing to its salty and slightly medicinal notes.

Fuji
 

Iodine and a fair bit of peat on the nose with freshly cracked salt in the background. Its a bit more fruity on the palate with green pear and apple.  Camphor and lightly toasted oak give it some dimension and it finishes with licorice.

 

 

Ries
 

n: forest pine, green apple, dried pineapple, and caramel. Malty with light peat smoke and sea fog.

 

 

t: grassy sweetness and nice oak influence. A nice amount of peat smoke and dense caramel. Black mushroom, deep pine forest, light white paper smoke. Semi-sweet with hint of salted plum (ume). Green banana with a hint of salted butter. Gray sea salt and damp earth in the dry finish. Tasty and nice, but possibly too evenly balanced.  [B/B+]

n:  Dark berry pie and pewter

 

p:  Watermelon jolly rancher and bitter greens.  Complex and comforting.
